Dear Colleagues;

Hoping you are well. I just got back from a 17 day trip to Japan with my wife, older son and his wife and 5 month old grandson. It helped that my older son is fluent in Japanese as we went to some rural areas where English was not widely spoken.

Japan has westernized quite a bit over the years especially diet wise with many western style bakeries, coffee shops etc. While we were there, I tried to stick to a more traditional Japanese diet. We hear a lot about the Mediterranean diet but the Japanese typically live longer, despite a high rate of smoking, cramped living quarters and very high EMF exposure.

I thought we could take a look at a typical Japanese breakfast (which isn’t that much different from their other two meals). Of course there is always miso soup which makes me a little nervous as you are eating a living fungus but it appears to be a beneficial probiotic and protective against radiation and a great source of enzymes. In Matsumoto we toured a traditional 3-year barrel aged miso factory. Barrel aged is hard to find but best. In the soup there is typically a little onion and maybe a few other items such as tofu or inari/tofu skin. An alternative to miso soup would be dashi, a type of fish broth. There are multiple small servings of pickled veggies (cucumbers, greens, various types of radish, etc.). Then there is fish maybe 3 or 4 oz of grilled or smoked fish- salmon, mackerel, etc. Usually some steamed vegetables (lotus root, yams (some of a wild variety we do not have access to in the US), konjac root or shiataki (a great prebiotic resistant starch and mycotoxin binder), some green tea and a small serving of fruit. Of course there is rice too, almost always rice and or buckwheat noodles.

The traditional diet is low in refined sweets, low in gluten, low lectin, very low nightshade (a little eggplant), high in omega 3 and high in beneficial probiotic organisms. There is also natto served which would be high in probiotics, anticoagulants and vitamin K2. Everything is small portions and there seems to be a natural synergy balancing the ingredients. At other meals they may add a glass of shochu- a sweet potato based alcohol that increases your plasminogen level. Lots of detox-like veggies such as onions, radishes, radish sprouts, various wild greens, etc.

It is a shame to see the western style bake shops, Starbucks, etc. take over as the younger generation seems to suffer from more skin blemishes, crooked teeth, etc.

I did not see nearly the number of hospitals or medical office complexes as here in the US and most people bicycle to the train and to work- even quite elderly people.
